Betty’s Nutritious Ranger Cookies Recipe
In this video, Betty demonstrates how to make a nutritious cookie for packing in lunch boxes—her delectable Ranger Cookie. This is the full recipe (with a minor substitution), but you may reduce the amount of sugar for a cookie that is not as sweet, but is still excellent and very healthy (as cookies go)!
Ingredients:
½ cup butter or margarine, softened to room temperature
½ cup white sugar
½ cup light brown sugar
1 egg, well-beaten
½ teaspoon vanilla extract
1 cup self-rising flour
1 cup quick oats
1 cup Wheaties cereal, crushed a little (You may use any flaked cereal, like Total, Special-K, or raisin bran)
½ cup chopped pecans (You may substitute ½ cup of any one of the following: raisins, flaked coconut, or chocolate chips)

In a medium-sized bowl, use a fork to mix ½ cup butter or margarine, ½ cup sugar, and ½ cup brown sugar until well blended. Set aside. In a large mixing bowl, beat 1 egg. Add the butter/sugar mixture and ½ teaspoon vanilla to the beaten egg. Blend well. Now, add 1 cup quick oats, 1 cup Wheaties, ½ cup chopped pecans, and 1 cup self-rising flour. Mix together. The dough will be chunky when mixed. You may drop dough by rounded teaspoonfuls 2-inches apart on a baking pan or cookie sheet that has been sprayed with cooking oil spray. Or, you may form the rounded teaspoonsfuls of dough into 1 ½-inch circles, and place them on your prepared baking pan. Bake for 10 minutes. Using an appropritate utensil, Immediately remove cookies from baking sheet to an attractive serving dish. Serve immediately, while warm, or let them cool and store them in a closed container for packing in lunches (wrapped individually). These are a favorite cookie around my house. They please everyone, regardless of age! Plus, even though they do contain fat and sugar, they are more than just a sugar cookie—they are packed with lots of ingredients that you might otherwise have a hard time getting your child to eat! We love them!!!

Apple Crisp with Maple Cream
So, as I usually do, I take the end of week ingredients I have left in my refrigerator and pantry, and depending on what I have, I try to put together something tasty. This week, I had a few apples left in the fridge, some sour cream with no plans to use, and a few graham crackers left in an open package. I took the inspiration for this dessert from my favorite "go-to" breakfast. This certainly can be served as a breakfast too as it has the basic elements of a morning meal, but also works as a hearty dessert. Hope you give the recipe a try! It's a bit of a twist on a traditional recipe...
Hearty Crisp:
3 sheets Graham cracker, finely ground (about 1/2 cup crumbs)
1 cup old-fashioned rolled oats
¼ cup ground flax seed
1/3 cup brown sugar
1 tsp. cinnamon
½ tsp. salt
~mix well in a bowl, then add:
1 stick (1/2 cup) butter or margarine
1 tsp. maple extract
1/3 cup roughly chopped almonds or walnuts (set aside for garnish before baking)
~blend with a pastry blender or fork until crumbly in texture. Set aside.
Apple base:
4 diced apples, skin on. I used Fuji Apples
1 TBSP lemon juice
3 TBSP sugar (white is fine)
2 ½ TBSP cornstarch (or 5 TBSP flour)
½ tsp. cinnamon
¼ tsp salt
~mix thoroughly, then spread in an even layer in a greased 8x8" square pan. Top with crisp mixture. I topped this all with 1/3 cup roughly chopped almonds, which is completely optional. Walnuts would have been equally delicious. Bake at 375 degrees for 40 minutes, or until browned and bubbly.
Maple Cream:
1 cup light sour cream (or full fat if you don't care)
¾ cup powdered sugar
Dash or two of salt
½ tsp. maple extract
~mix until smooth, and refrigerate until ready to use.
Serve warm crisp with a generous spoonful of maple cream, and above all...ENJOY!!

Our next recipe for breakfast is going to be peanut butter and jelly oatmeal. So what were going to do first is were going to take out 1/3 cup of strawberries and combine it with the 1 teaspoon of sugar substitute. Ok, so youre just going to mix that together. Let those strawberries sweeten a little bit. Set that aside. For the oatmeal were going to take the 1/3 cup of quick cooking oats and this 1/3 cup of skim milk. And we can make this in the microwave which is a really easy thing to do for a nice breakfast. Kind of stir that up a bit. Ok, and were going to sick that in the microwave for 1 ½ - 2 minutes on high. And were going to wait for that to cook. Alright, the oats are ready. So next what were going to do is were going to top it with the strawberries mixed with that sugar substitute and this tablespoon, this is actually natural, reduced fat peanut butter. So the great thing about the natural peanut butter is you dont get any of that trans fat in it which you sometime get with some of that more commercially prepared peanut butter. So there we go. So what this is, is this is peanut butter and jelly oatmeal. The peanut butter is a great source of healthy fat. The oats are a great source of fiber. We have 8 grams of fiber in this one serving and 225 calories.

Ingredients
6 cups thinly sliced apples
2 tablespoons lemon juice
1/2 cup water
1 - 1/2 cups packed brown sugar
1 cup butter, softened
1 - 1/2 cups coarsely chopped walnuts
Dry mix:
1 cup all-purpose flour
1 - 1/2 cup rolled oats
1 tablespoon cinnamon
1/2 teaspoon salt salt
Directions
1. Preheat oven to 350 degrees.
2. Toss sliced apples with lemon juice and water in plastic bag and set aside.
3. In mixer, cream brown sugar and butter
4. Add vanilla
5. Gradually add dry mix
6. Coat 9 x 13 in. pan
7. Spread apples evenly
8. Break apart topping with hands and place on apples
9. Bake for 40 minutes until top is lightly browned.
Wait at least 30 minutes before serving.

Dry ingredients:
1 - 1/2 cups All purpose Flour
1 cup old oatmeal
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
------------
4 ripe bananas, mashed
Juice of one lemon
1/2 butter - softened
1 cup brown sugar
2 eggs
1/2 cup sour cream
1 teaspoon vanilla
3/4 cup thinly sliced almonds
1 - 1/2 cups milk chocolate chips mixed with 1 tablespoon of flour
------------
Preheat oven to 350 F.
Coat and flour a 9 x 5 x 3 in. bread pan
Combine dry ingredient items and set aside
Peel bananas and mash with lemon juice
In mixer combine brown sugar butter and vanilla
Add the eggs, sour cream and bananas
Add the dry ingredients and combine thoroughly
Manually stir in the sliced almonds and chocolate chips
Note: The flour in the chocolate chips should prevent it from sinking to the bottom
Bake for about 1 hour
Transfer to wire rack after 30 minutes, let cool completely before serving
