Betty’s Nutritious Ranger Cookies Recipe
In this video, Betty demonstrates how to make a nutritious cookie for packing in lunch boxes—her delectable Ranger Cookie. This is the full recipe (with a minor substitution), but you may reduce the amount of sugar for a cookie that is not as sweet, but is still excellent and very healthy (as cookies go)!
Ingredients:
½ cup butter or margarine, softened to room temperature
½ cup white sugar
½ cup light brown sugar
1 egg, well-beaten
½ teaspoon vanilla extract
1 cup self-rising flour
1 cup quick oats
1 cup Wheaties cereal, crushed a little (You may use any flaked cereal, like Total, Special-K, or raisin bran)
½ cup chopped pecans (You may substitute ½ cup of any one of the following: raisins, flaked coconut, or chocolate chips)

In a medium-sized bowl, use a fork to mix ½ cup butter or margarine, ½ cup sugar, and ½ cup brown sugar until well blended. Set aside. In a large mixing bowl, beat 1 egg. Add the butter/sugar mixture and ½ teaspoon vanilla to the beaten egg. Blend well. Now, add 1 cup quick oats, 1 cup Wheaties, ½ cup chopped pecans, and 1 cup self-rising flour. Mix together. The dough will be chunky when mixed. You may drop dough by rounded teaspoonfuls 2-inches apart on a baking pan or cookie sheet that has been sprayed with cooking oil spray. Or, you may form the rounded teaspoonsfuls of dough into 1 ½-inch circles, and place them on your prepared baking pan. Bake for 10 minutes. Using an appropritate utensil, Immediately remove cookies from baking sheet to an attractive serving dish. Serve immediately, while warm, or let them cool and store them in a closed container for packing in lunches (wrapped individually). These are a favorite cookie around my house. They please everyone, regardless of age! Plus, even though they do contain fat and sugar, they are more than just a sugar cookie—they are packed with lots of ingredients that you might otherwise have a hard time getting your child to eat! We love them!!!

Apple Pear Cranberry Crisp
I had some fruit leftover that I wanted to use up so I made a crisp. The recipe calls for the fruit to be peeled. I never peel mine; it's a matter of taste. Here's what you'll need:
2 c flour
2 c rooled oats
1 tsp cinnamon
1/2 tsp ground nutmeg
1 1/2 c packed brown sugar
1 1/2 c butter
2 apples, cored, peeled and chopped
2 pear, cored, peeled and chopped
1 c cranberries
1 c cranberry juice
Preheat oven to 350 degrees F (175 C). Combine flour, oatmeal, cinnamon, nutmeg and brown sugar. Cut in butter until crumbly. Take half of mixture and pat it into bottom of baking dish. Cover crumb mixture with fruit. Sprinkle remining crumb mixture over top. Bake at 350 F for 30 minutes. Pour cranberry juice over the top. Bake 30minutes for a total of one hour.
You could serve this with yogurt or icecream.

Betty’s Chocolate Halloween Cookies Recipe–Made with Carter
In this video, Betty demonstrates how to turn her Old-Fashioned Sugar Cookies into chocolate Halloween Cookies. These are great cookies for decorating with children, and they are popular with everyone! With Halloween near, you may find this recipe useful for making cookies in a variety of interesting shapes and colors!
Ingredients (for cookie dough):
1 cup butter
1 ½ cups sugar
2 eggs
2 ¾ cups self-rising flour
2 tablespoons baking cocoa (to make 1/2 of the dough into chocolate cookies)
Betty's Buttercream Frosting Recipe
Ingredients:
16 oz. package confectioner's sugar
½ cup butter, softened
3 tablespoons milk
2 teaspoons vanilla extract
Use an electric mixer on low speed to beat 16 oz. confectioner's sugar, ½ cup butter, 3 tablespoons milk, and 2 teaspoons vanilla until well blended and smooth. If the frosting is too thick, add a small amount of milk. If it is not thick enough, add more confectioners sugar. When it is of spreading consistency, it is ready to use. You may refrigerate it until later. When you remove it from the refrigerator, let it stand until it reaches room temperature for easiest handling. This recipe will make approximately 2 ½ cups of frosting. To color the frosting orange, use 10 drops of yellow food coloring for each single drop of red food coloring. To color the frosting black, use a ratio of 3 drops red to 3 drops blue to 2 drops green.
Instructions for cookie dough:
Cream together 1 cup butter and 1 ½ cups sugar. Add 2 eggs, and beat until light and fluffy. Add 2 ¾ cups self-rising flour to the creamed mixture. Chill for at least one hour in the refrigerator. (I divided my dough into two equal parts in order to make half of them chocolate. To the half that is to be chocolate, stir in 2 tablespoons baking cocoa before refrigerating. When chilled, roll the dough on a lightly floured flat surface to about ¼-inch thickness. Use cookie cutters to cut into desired shapes. Bake on ungreased cookie sheets (or baking pans) at 350 degrees for about 10 minutes. Remove immediately from cookie sheets with a flat spatula, and place on a rack or flat surface to cool. When cool, ice the cookies with colored buttercream frosting, as desired, and arrange cookies in a single layer on a large plate or tray. Refrigerate, to set up more quickly.
