vegan oatmeal chocolate chip cookies
Ingredients
1 cup flour
¾ cup rolled oat
½ cup sugar
1 tsp baking powder
½ tsp ground cinnamon
½ tsp nutmeg
¼ tsp ground ginger
1/3 cup vegan butter or margarine
¼ cup of your favorite nut butter (I used peanut butter)
2 egg replacers
½ tsp vanilla extract
1/3 cup vegan chocolate chips (you can add more if you want)
¼ cup walnut (optional)
Preheat your oven at 350 mix everything together in a bowl. Scope about tablespoon amount and shape them into patties. place them on a cookie sheet, and bake for about 12-15 minutes. Mine took a bit more my cookie sheet is really think. Also I started the broiler for about a minute to give the top a golden color (but you can skip this part)
This was inspired by the Sarah Kramer nutty oatmeal raisin cookies, I just made few changes. If you switch the chocolate chips for raisins thats great too.

No Meat Loaf

Recipe:
1 1/4 cups quick-cooking or regular rolled oats
vegetable oil spray
1/4 teaspoon ground black pepper
1/2 teaspoon dried sage
1/2 teaspoon dried thyme
2 teaspoons mustard
1 cup plain tomato sauce, or 1 cup crushed tomatoes
3 tablespoons reduced-sodium soy sauce or Bragg's Liquid Aminos
2 cups cooked bulgur
1/2 green or red bell pepper, seeded and minced
1 carrot, minced
2 celery stalks, minced
1 small onion, minced
1/4 cup finely chopped walnuts( I used almonds)
1 1/2 cups bread crumbs, preferably whole-wheat (23 slices bread)
1/2 cup ketchup or barbeque sauce (optional)
Preheat oven to 350˚F.
Use a food processor to finely chop or mince walnuts, onion, celery, carrot, and green bell pepper. Combine all ingredients except vegetable oil spray and ketchup or barbeque sauce in a large bowl. Stir with a large spoon or knead by hand until well-mixed.
Press into a vegetable oil sprayed 5"×9" loaf pan or similar baking dish.
Top with ketchup or barbeque sauce, if using, and bake for 60 minutes. Let stand 10 minutes before cutting.
To store leftovers, remove loaf from pan and let cool. Stored in a covered container in the refrigerator, leftover No-Meat Loaf will keep for up to 3 days.

cornmeal buns
this makes 4 buns
1 cup unbleached organic white flour
1/2 cup organic cornmeal
pinch of salt
3 T. olive oil
1 cup organic milk (straus is my fave!)
2 t. baking powder
mix all together. knead a bit on a floured surface. cut into four pieces and shape as you like. bake on a greased cookie sheet for about 15 minutes at 425*. at 10 minutes, lightly brush with a bit of olive oil and continue baking for 5 more minutes. remove when golden brown and irresistible.
yam fries
2 organic yams
sprig of fresh rosemary
olive oil
salt chop
yams into strips. put on a greased cookie sheet and toss with more olive oil, salt and rosemary. bake at 425* for about 45 minutes or until perfectly tender. yum!
veggie burgers
this makes 4 burgers
1/2 roasted pumpkin
we roasted it whole until it got soft enough to easily cut open, scoop out the insides, peel, and cut into slices. then i threw the strips in the oven in a pan with garlic, onion, olive oil, salt, pepper, lemon, and on 350 or 400* for 20 minutes or until soft and cooked. we put the pumpkin in the blender with garlic, salt and pepper with a splash or almond milk and OJ, and cilantro.
then we add this to a bowl with:
a handful of ripe, cut up dates
mashed cashews
chopped and sauteed mushrooms
1/2-1 cup cooked lentils
1 cup or so of rolled oats
1/4- 1/2 cup flour
salt, pepper, cayenne, cinnamon and paprika
make sure consistency is thick enough to form patties that withstand a grill or pan and cook them until crispy and brown! delish!
mango aioli
in a blender add:
1/2 chopped organic mango
handful of organic cilantro
squirt of lemon
couple cloves of garlic
splash of hemp milk
splash of OJ
blend it all up and add tons to burger and fries!
